Ingredients
  

Tomato Mixture

  • 2 pounds ripe tomatoes about 5 to 6 medium tomatoes
  • 0.5 teaspoon fine sea salt plus more to taste
  • 0.5 cup finely chopped white onion about ½ medium
  • 0.5 cup chopped fresh basil about ¾ ounce
  • 2 cloves garlic pressed or minced

Toast

  • 1 baguette French bread
  • 4-5 tablespoons extra-virgin olive oil divided
  • Thick balsamic vinegar to drizzle on top
  • optional Maldon flaky sea salt

Instructions
 

Preparation

  • Preheat the oven to 450 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper if desired.
  • Dice your tomatoes and transfer them to a medium mixing bowl, leaving the seeds and juice behind. Stir in the salt, onion, basil, and garlic.
  • Slice your baguette on the diagonal into pieces no wider than ½-inch and lightly brush both sides with olive oil.
  • Place the slices in a single layer on the baking sheet and bake for 6 to 9 minutes until golden.
  • Drain excess tomato juice, add remaining olive oil, and season with salt and garlic to taste.
  • Top each toast with the tomato mixture, drizzle balsamic vinegar, and sprinkle with flaky salt before serving.

Notes

You can prepare the tomato mixture up to 2 days in advance and keep it in the refrigerator. For gluten-free options, use gluten-free bread or serve with crackers.
