Ingredients
  

  • 4 thighs bone-in, skin-on chicken 2 to 2 ¼ pounds total
  • 1 teaspoon kosher salt
  • 2 medium limes divided
  • 1 piece fresh ginger (1-inch)
  • ¾ cup sweet chili sauce

Instructions
 

  • Arrange a rack in the middle of the oven and heat the oven to 400°F.
  • Pat chicken thighs dry with paper towels and season with salt. Sear in skillet until golden-brown, 17 to 20 minutes.
  • Grate the zest from 1 lime into a bowl, juice the lime, and mix with ginger and sweet chili sauce.
  • Transfer chicken to a plate, remove excess fat from the pan, return chicken skin-side up and pour glaze over.
  • Roast in the oven until internal temperature reaches 165°F, about 10 to 12 minutes. Broil for extra color, if desired.
  • Serve with reserved lime wedges.
