Ingredients
  

Pasta

  • 12 oz spaghetti

Sauce Ingredients

  • 2 tablespoon olive oil
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • ½ cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • ½ cup Parmesan cheese (grated)
  • 4 cups fresh spinach
  • salt & pepper to taste
  • red pepper flakes (optional)

Instructions
 

Cooking Instructions

  • Cook spaghetti to al dente. Reserve 1 cup pasta water.
  • Sauté onion in olive oil until soft. Add garlic and sun-dried tomatoes.
  • Stir in heavy cream and Parmesan. Simmer until smooth.
  • Add spinach and cook until wilted.
  • Toss pasta with sauce, season, and serve hot.

Notes

Reserve pasta water to adjust sauce consistency. Add grilled chicken or shrimp for extra protein. Adjust seasoning to taste.
