Ingredients
  

Crispy Rice Base

  • 1 batch crispy rice cakes Makes 15 pieces

Topping Options

  • 225 g sashimi grade tuna or salmon
  • 360 g canned tuna in oil, drained
  • 1 medium avocado cut into small slices or make into sauce
  • 15 slices jalapeño thin, optional garnish
  • ½ teaspoon black sesame seeds for garnish

Nobu Spicy Tuna Ingredients

  • 1 tablespoon sriracha adjust spiciness to taste
  • 4 teaspoon kewpie mayonnaise or whole egg mayonnaise
  • 1 teaspoon sesame oil
  • ¼ teaspoon cooking salt
  • 2 tablespoon finely chopped green onion
  • 1 teaspoon white sesame seeds
  • ½ teaspoon black sesame seeds divided

Creamy Spicy Canned Tuna Ingredients

  • 3 tablespoon sriracha adjust spiciness to taste
  • 4 tablespoon kewpie mayonnaise or substitute
  • 1 tablespoon lemon juice or rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon cooking/kosher salt
  • ¼ cup finely chopped green onion
  • 2 teaspoon white sesame seeds optional
  • 1 ½ teaspoon black sesame seeds divided

Instructions
 

Preparation Instructions

  • Start the rice the day before or first thing in the morning - it needs minimum 4 hours to chill.
  • Make the toppings first, then refrigerate while you cook the crispy rice cakes.
  • Cook the crispy rice cakes and sprinkle with salt as per the recipe.
  • Assemble - Place rice cakes on a serving platter. Pile on toppings - form into shapes and slide on. Sprinkle with black sesame seeds and top with jalapeño.
  • Eat!

Nobu Spicy Tuna Preparation

  • Freeze tuna for 30 minutes to firm it for easier chopping.
  • Cut into 0.5cm cubes and let de-chill for 20 minutes before mixing.
  • Add all ingredients into the tuna and mix until combined.

Creamy Spicy Canned Tuna Preparation

  • Place canned tuna in a bowl and mash it finely with a fork. Add the rest of the ingredients and mix well.

Notes

Leftovers can soften rice cakes within an hour. Consume the raw tuna topping within an hour once assembled, while canned tuna mixture can last a few days.
