Ingredients
  

  • 12 oz spaghetti
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 5 oz fresh spinach
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • ¼ teaspoon red pepper flakes optional
  • Fresh basil leaves for garnish

Instructions
 

  • Boil the spaghetti until al dente; reserve ½ cup of pasta water.
  • Sauté garlic in olive oil, then add spinach and cook until wilted.
  • Add sun-dried tomatoes and stir in heavy cream. Simmer and mix in Parmesan cheese until melted.
  • Combine spaghetti with the sauce, using reserved pasta water if needed.
  • Serve garnished with fresh basil and optional red pepper flakes.

Notes

For a lighter option, substitute heavy cream with coconut cream. Add grilled chicken or shrimp for extra protein. Gluten-free spaghetti works well for dietary adjustments.
