Ingredients
  

Meats

  • 1 lb ground beef
  • 1 lb ground pork

Canned Goods

  • 2 15.5 oz cans beans kidney and pinto
  • 2 14.5 oz cans diced tomatoes
  • 3 tablespoon tomato paste
  • 4 units chipotle peppers canned in adobo sauce
  • 2 cups beef broth

Vegetables

  • 1 small onion
  • 6 cloves garlic
  • 1 unit jalapeño

Spices

  • 3 tablespoon chili powder
  • 2 tablespoon cumin powder
  • 1 teaspoon salt plus to taste
  • 2 tablespoon cooking oil

Instructions
 

Cooking Instructions

  • Heat cooking oil over medium high heat in a dutch oven. Add chopped onions, garlic and jalapeño. Sauté about 5 minutes.
  • Add meat, plus 1 teaspoon salt, and sauté until browned, about 10 minutes. Add chili powder and cumin and mix well.
  • Chop chipotles and add to pot, along with remaining ingredients. Mix, and bring to low boil.
  • Reduce heat to low and simmer, uncovered, at least 45 minutes. Taste occasionally and add additional salt or spices if desired.

Notes

Serve with cornbread and a salad. Alternatively, you can cook this chili in a crock pot. Sauté veggies, add meat and brown. Then add all ingredients to crock pot and cook for 7-8 hours on high or 4-5 hours on low.
