Ingredients
  

For the bars

  • ¼ cup oil or melted and cooled butter
  • 2 large eggs room temperature
  • 1 cup bananas mashed, about 3 small or 2 large
  • cup creamy peanut butter
  • ¾ cup dark brown sugar
  • ¾ cup milk room temperature
  • 2 cups rolled oats
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • 1 tablespoon vanilla
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 ½ tsps cinnamon
  • 1 teaspoon cornstarch

For the topping

  • 2 tablespoon white sugar
  • ¼ teaspoon cinnamon

Instructions
 

Preparation

  • Preheat the oven to 350℉/180℃. Grease the pan and line it with parchment paper. Set aside. Mash the bananas and set aside.
  • In a large bowl, combine flour, rolled oats, baking soda, baking powder, cornstarch, cinnamon, and salt. Mix until combined and set aside.
  • In another bowl, whisk together oil, brown sugar, and peanut butter until well combined.
  • Add eggs, vanilla, milk, and mashed bananas. Whisk until fully incorporated.
  • Combine the dry ingredients with the wet ingredients and mix until just combined. Do not over-mix!
  • Spread the batter evenly into the prepared pan. Mix together the sugar and cinnamon in a small cup and sprinkle over the top.
  • Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before slicing.
  • Slice and enjoy! Store in an airtight container on the counter for 1 day or in the refrigerator for up to 5 days.

Notes

These bars are soft-baked and great as a meal prep option. They stay fresh for a few days when stored properly.
