Ingredients
  

Base Ingredients

  • 1.5 tablespoon olive oil
  • 2 cloves garlic finely minced
  • 1 onion finely chopped
  • 500 g beef mince / ground beef
  • 2 teaspoon Italian herbs (store-bought mix)
  • 2 tablespoon tomato paste
  • 400 g crushed tomatoes (or tomato passata)
  • 0.5 teaspoon red pepper flakes (optional)
  • 1.5 teaspoon cooking salt (kosher salt)
  • 0.5 teaspoon black pepper
  • 4 cups chicken stock (low sodium)
  • 350 g pasta (fusilli, penne, or elbow macaroni)
  • 0.75 cups thickened cream

Serving Recommendations

  • Parmesan cheese finely grated
  • Parsley finely chopped, optional

Instructions
 

Cooking Instructions

  • Heat the oil on high heat in a large heavy-based pot. Cook garlic and onion for 1 ½ minutes.
  • Add beef and cook, breaking it up, until no longer red. Add Italian herbs and cook for 30 seconds, then add tomato paste and cook for 1 minute.
  • Add crushed tomato, chicken stock, salt, pepper, and red pepper flakes. Stir, then add the pasta.
  • Bring to a simmer, then cook for 15 minutes, stirring frequently towards the end.
  • Add cream, then simmer for 1 to 2 more minutes. It will be saucy, perfect for serving.
  • Remove from stove, stir well, and ladle into bowls. Serve with parmesan and parsley.

Notes

Leftovers will keep for 3 days in the fridge. Not suitable for freezing.
