To avoid ending up with mush, use good quality rice - no Minute Rice, please! I HIGHLY recommend Lundberg California White Jasmine Rice. To ensure the chicken cooks through by the time the rice is done, cut it into small, bite-sized pieces — NOT CHUNKS OR HUNKS. This dish will thicken as it cools and I prefer the flavor better when it's warm vs piping hot. Store leftovers in glass storage containers.
