Ingredients
  

HONEY LEMON DRESSING

  • 4 tablespoons extra virgin olive oil
  • 1 large lemon juiced
  • 2 tablespoons honey
  • freshly ground black pepper to taste
  • ½ teaspoon kosher salt

SALAD

  • 6 cups mixed greens
  • 1 bunch arugula or one bag
  • 3 large tomatoes chopped
  • ½ large red onion thinly sliced
  • ¾ cup shaved fresh Parmesan cheese

Instructions
 

MAKE THE DRESSING

  • In a small bowl, whisk together the olive oil, lemon juice and honey. Add salt and pepper to taste.

ASSEMBLE THE SALAD

  • In a large bowl, toss the salad ingredients together (through red onion). Add the dressing and lightly toss again.
  • Divide the salad among salad plates and garnish with shaved Parmesan cheese.
