  • 1.5 cups crushed buttery crackers such as Ritz
  • cup evaporated milk
  • 1.5 Tbsp. Worcestershire sauce
  • 2 tsp. kosher salt
  • ½ tsp. black pepper
  • 2 large eggs
  • 2 cloves garlic grated on a Microplane
  • 1 medium sweet onion 7 oz., grated
  • 2 lb. 85% lean ground beef
  • cup ketchup
  • 3 Tbsp. pepper jelly

  • Preheat oven to 350°F. Line a sheet pan with foil; coat foil with cooking spray.
  • Stir together cracker crumbs, evaporated milk, Worcestershire, salt, pepper, eggs, garlic, and onion in a large bowl. Add beef to bowl; mix well (with hands) to combine. Turn beef mixture out onto prepared pan and shape into a 9 x 4-inch freeform loaf.
  • Bake at 350°F for 35 minutes. Meanwhile, whisk together ketchup and pepper jelly in a medium bowl.
  • Remove meatloaf from oven (leave oven on). Pat away drippings and cooked proteins from around the meatloaf. Spread ketchup mixture over meatloaf and return to oven.
  • Bake until a thermometer inserted in center registers 165°F, about 30 minutes. Remove meatloaf from oven and let stand 5 minutes. Cut into 12 slices.

Notes

You can substitute the pepper jelly with barbecue sauce or apricot jam for a similar sweet-tangy flavor. Ground turkey or other meats can also be used in place of beef.
