Ingredients
  

Potatoes and Vegetables

  • 2 pieces Russet Potatoes
  • ½ cup White Onion diced
  • ½ cup Green Onion for garnish

Meat

  • 5-6 slices Bacon diced

Eggs and Dairy

  • 4 pieces Eggs
  • 2 tablespoon Sour Cream or Creama
  • ½ cup Cheddar Cheese

Seasonings

  • ½-1 tablespoon Salt
  • ½-1 tablespoon Pepper
  • ½-1 tablespoon Garlic Powder
  • ½-1 tablespoon Onion Powder
  • ½-1 tablespoon Paprika

Instructions
 

Cooking Steps

  • Thoroughly wash your potatoes.
  • Cut your potatoes into small cubes.
  • In a hot cast iron skillet, add your potatoes and seasonings. Cook the potatoes until halfway done.
  • To the skillet, add diced onion and diced bacon.
  • Cook everything and make 4 wells in the skillet.
  • Once everything is cooked, reduce the heat from high to medium and crack in 4 eggs.
  • Add a lid and cook eggs until desired consistency.
  • Remove the lid and add sour cream and green onions!
