Ingredients
  

Meat

  • 6 strips bacon

Cheese

  • 6 tablespoons garlic and herb cream cheese softened
  • 2 ounces freshly grated Cheddar cheese
  • 2 ounces freshly grated Monterey Jack
  • 2 tablespoons finely grated Parmesan optional

Vegetables

  • 2 to 4 tablespoons pickled jalapeños finely chopped, or to taste
  • ½ teaspoon cumin optional

Bread

  • 4 slices sourdough bread

Fat

  • 1 to 2 tablespoons butter

Instructions
 

Cooking Method

  • Cook the bacon in a non-stick skillet over medium heat until crispy, then drain on paper towel.
  • In a bowl, mix the cream cheese, Cheddar, Monterey Jack, chopped jalapeños, and cumin. Add chopped bacon.
  • Butter one side of each slice of bread. Spread filling on 2 slices, and top with remaining slices.
  • Wipe the skillet and set over medium heat. If using, sprinkle sandwiches with Parmesan cheese, then cook until golden.
  • Cool slightly before slicing and serve immediately.

Notes

The filling can be made ahead and stored in the fridge for up to 3 days. Allow it to come to room temperature before using.
