Ingredients
  

Chicken

  • 4 pieces chicken breasts
  • 1 tablespoon paprika
  • 1 tablespoon oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • ¼ teaspoon cayenne
  • cup olive oil

Pickled Red Onions

  • ½ red onion very thinly sliced paper thin
  • ¼ cup apple cider vinegar
  • 1 teaspoon honey
  • 2 tablespoon water

Gyro Bowl

  • 2 heads romaine shredded
  • 4 Persian cucumbers thinly sliced
  • 1.5 cups cherry tomatoes halved
  • ¾ cup feta crumbled
  • ½ cup Tzatziki
  • 2 cups cooked brown rice
  • ¼ cup chopped fresh mint

Instructions
 

Cooking Instructions

  • Preheat the oven to 425F.
  • Cut the chicken into large chunks approximately 2 inches in size. Place them in a tinfoil lined baking dish, add the olive oil and all of the spices and stir with a spatula to ensure they are all well coated. Transfer to the oven to bake for 20 minutes.
  • Once the chicken is done cooking, using two forks (or use fingers to shred it into large pieces). Mix the shredded chicken with any leftover spices and oil in the bottom of the pan.
  • In a small bowl whisk together the apple cider vinegar, honey and water. Microwave for 40 seconds until warm and then add in the onion slices. Press down on the onions to ensure they are submerged. Leave to 'pickle' for 20 minutes.
  • To assemble, add 1 ½ cups shredded romaine to each bowl, add approx ½ cup cooked brown rice to each bowl followed by the shredded chicken, tomatoes, and cucumber slices. Crumble feta overtop, add 3-4 big dollops of tzatziki to each bowl and sprinkle with the pickled red onions and fresh chopped mint.

Notes

This recipe is great for meal prepping for easy meals throughout the week.
