Dough Ingredients

  • 1 package active dry yeast 2 ¼ teaspoons
  • 1 teaspoon sugar
  • cup warm water 105°F to 115°F
  • 2 ¼ cups bread flour plus more for flouring
  • 1 teaspoon salt
  • 1 tablespoon extra virgin olive oil plus more for greasing

  • 14 ounces pizza dough

Garlic Butter Coating

  • 5 tablespoons unsalted butter
  • 4 cloves garlic minced
  • ¼ cup parsley minced
  • 1 teaspoon salt

Instructions
 

Preparation

  • Proof the yeast by stirring it with sugar into warm water and letting it sit for 3-5 minutes until foamy.
  • In a large bowl, whisk together flour and salt, then add olive oil and yeast mixture to form a soft dough.
  • Knead the dough for 5 to 10 minutes until soft and tacky, adding more water if too dry.
  • Shape the dough into a ball, coat lightly with olive oil, and let it rise until doubled in size, covered with plastic wrap.
  • Once risen, divide dough into fourths, shape into rectangles, and cut into strips.
  • Form each strip into a knot and place on prepared baking sheets to rise again.
  • Preheat oven to 400°F while knots finish proofing.
  • Bake the knots until browned, about 12 to 15 minutes.
  • Melt butter in a pot, add minced garlic, cook for 1-2 minutes, then stir in salt and parsley.
  • Brush baked knots with garlic butter mixture and serve warm.

Notes

Store-bought pizza dough can be used as a time-saver. Best served warm, but also enjoyable at room temperature.
