Ingredients
  

Chicken and Sauce

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 package (16 oz) potato gnocchi
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup baby spinach (optional)
  • Fresh parsley, chopped (for garnish)

Cooking Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
  • In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
  • Add gnocchi and stir to coat. Cook for 2-3 minutes until lightly golden.
  • Pour in chicken broth and cream, stirring well. Bring to a simmer and cook for 5-6 minutes, until gnocchi is tender and sauce thickens.
  • Stir in Parmesan cheese and Italian seasoning. Return chicken to the skillet and mix to combine.
  • If using, add spinach and cook until wilted.
  • Garnish with chopped parsley and serve hot.

Notes

Use pre-cooked rotisserie chicken for a shortcut. Add mushrooms or sun-dried tomatoes for extra flavor. Use half-and-half instead of heavy cream for a lighter version.
