Ingredients
  

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon ground nutmeg

Wet Ingredients

  • 1 cup granulated sugar
  • 0.67 cups shortening
  • 2 each eggs
  • 0.5 teaspoon vanilla
  • 1 cup milk 2% or whole work best

Coating

  • 1 cup butter melted
  • 1.5 cups granulated sugar
  • 1 tablespoon cinnamon

Instructions
 

Preparation

  • Preheat oven to 350 degrees. Spray a mini-muffin pan with cooking spray and set aside.
  • Mix 1½ cups granulated sugar and 1 tablespoon ground cinnamon in a small mixing bowl for the coating. Set aside.
  • In a mixing bowl, stir together the flour, baking powder, salt, and nutmeg. Set aside.
  • In a large mixing bowl, cream the sugar and shortening for at least 1 minute using a hand mixer or stand mixer.
  • Add eggs and vanilla, then mix again.
  • Add ⅓ of the milk and ⅓ of the flour mixture, mixing well, and repeat two more times until fully mixed.
  • Spoon batter into each mini-muffin space, filling no more than ¾ full.
  • Bake for 10 minutes at 350 degrees until the tops are springy. You may need an additional minute depending on your oven.
  • Remove muffins and place them on a cooling rack. Respray the mini-muffin pan and cook the remaining batter.
  • Dip warm muffins into melted butter and then into the cinnamon-sugar mixture, coating all sides. Set on the cooling rack.
  • Enjoy while fresh.
