Ingredients
  

Noodles

  • 2 servings dry instant ramen noodle cakes or other noodles of choice (around 140 g total)

For Sautéing

  • 10 oz extra firm tofu sliced
  • veggies or mushrooms of choice sliced

Sauce

  • 1 cup water or vegetable broth
  • 5-7 tablespoon soy sauce adjust according to desired taste
  • 1.5 teaspoon dark soy sauce optional for colour
  • 2-3 tablespoon corn starch see notes
  • 1-3 tablespoon sugar adjust according to desired sweetness
  • 2 tablespoon rice vinegar adjust according to desired sourness
  • ¼ teaspoon ground pepper
  • ½ tablespoon chili garlic sauce optional for spice
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced (optional)

For Serving

  • Chopped scallions for topping
  • Sesame seeds for topping

Instructions

  • Mix all the sauce ingredients until well incorporated. Adjust the sauce ingredient measurements to your desired taste, then set aside.
  • Boil water in a small pot over high heat, then add in the ramen or other noodles.
  • Half cook the noodles until still very chewy, usually 2-3 minutes less than package instructions.
  • Drain water or strain the noodles, and set aside. Optionally, run under cold water.
  • Heat a pan over medium high and add a little oil.
  • Sauté veggies, mushrooms, or tofu until cooked to your liking.
  • Mix the sauce again and pour it into the pan, letting it simmer for 2-3 minutes.
  • When sauce slightly thickens, add noodles to the pan and mix well.
  • Cook noodles over medium high heat until absorbed some sauce and is thick, about 3 minutes.
  • Taste and season with more soy sauce, sweetener, and pepper if needed.
  • Garnish with sesame seeds and spring onions, and enjoy immediately while hot!

Notes

Double the sauce recipe if using more veggies or noodles. Adjust soy sauce when using vegetable broth. Corn starch helps thicken the sauce.
