Ingredients
  

Vegetables

  • 3 cups whole kernel corn from 2 cans
  • 2 jalapenos seeded and diced
  • ¼ cup cilantro chopped
  • 1 lime lime half juiced, half cut into wedges

Dairy

  • 1 cup shredded Colby Jack cheese or pepper jack for kick
  • cup sour cream
  • 8 ounces cream cheese cubed
  • ¼ cup queso fresco

Meat

  • 6 slices bacon cooked and chopped

Spices

  • 2 teaspoon Tajin seasoning optional

Chips

  • Tortilla Chips or Fritos for serving

Instructions
 

Cooking Instructions

  • Place the corn, jalapenos, colby jack, sour cream, tajin seasoning (optional), and cream cheese in the slow cooker. Turn on low for 2 hours.
  • Stir occasionally.
  • Add the bacon and stir, saving some for the top.
  • Remove and sprinkle with cilantro, queso fresco, and a squeeze of lime.
  • Serve with your choice of chips.

Notes

You can wait to add the cream cheese until 15 minutes before serving. Add the cream cheese and let it melt. Stir to combine.
