  • ¼ cup Extra-Virgin Olive Oil
  • 8 cloves Garlic (minced)
  • 1 28-ounce can Whole Tomatoes
  • 1 teaspoon Salt
  • ½ teaspoon Salt
  • ½ to 1 teaspoon Red Pepper Flakes
  • cup Heavy Cream
  • cup Fresh Basil Leaves (chopped)

Instructions

Cooking Instructions

  • Start by heating a large skillet over medium heat. Add olive oil. Add garlic and cook for 1 minute. Don't cook too long or the garlic will burn. Before you add the garlic, have the tomatoes ready to add.
  • Add the tomatoes, salt, pepper, and red pepper flakes. Break up the whole tomatoes with a spoon or with kitchen shears. You can also puree the tomatoes in a blender before adding if you desire a completely smooth sauce.
  • While the sauce is simmering, heat a large pot filled with water over high heat until boiling. Generously salt the water. Add the gnocchi and cook according to package instructions (about two minutes). Remove about ⅔ cup of pasta water to add to tomato sauce. Drain the pasta and set aside.
  • Add about ½ to ⅔ cup of reserved pasta water to the sauce. Once the sauce has simmered for about 10-15 minutes, pour in heavy cream. Add in fresh basil leaves. Taste for seasonings.
  • Add in gnocchi and fold together so it is completely covered in sauce. Sprinkle with freshly grated parmigiano reggiano or parmesan cheese, if using.
  • Serve with fresh burrata cheese, torn into pieces on top of the gnocchi.

Notes

For extra freshness, add baby spinach leaves to the sauce. Top with either fresh burrata or fresh mozzarella cheese.
