Pasta

  • 8 oz fettuccine

Chicken

  • 2 breasts chicken Season with salt, pepper, and Italian seasoning

Sauce

  • 2 tablespoon olive oil
  • 4 tablespoon unsalted butter Melt in the skillet
  • 3 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • ½ teaspoon crushed red pepper flakes Adjust for spice level
  • ½ teaspoon smoked paprika
  • ½ teaspoon Italian seasoning
  • Salt and pepper To taste
  • 2 tablespoon fresh parsley, chopped For garnish

Directions

  • Cook fettuccine according to package directions. Reserve ½ cup pasta water.
  • Season chicken with salt, pepper, and Italian seasoning.
  • Heat olive oil in a skillet and sear chicken 5–6 minutes per side. Slice and set aside.
  • In the same skillet, melt butter. Add garlic, mustard, lemon juice, pepper flakes, paprika, and Italian seasoning. Stir until fragrant.
  • Add cooked pasta and toss in the cowboy butter. Use reserved pasta water to loosen the sauce if needed.
  • Return chicken to skillet and toss with pasta until heated through.
  • Garnish with fresh parsley and serve hot.

Notes

Use thighs for extra juicy chicken. Grated Parmesan adds another layer of richness. Control spice level by adjusting red pepper flakes. Prep the cowboy butter ahead and store in the fridge.
