Ingredients
  

Cooking Oil

  • 2 tablespoons refined coconut oil or olive oil divided

Chicken

  • 4 pieces skinless, boneless chicken breasts (1 ½ to 2 pounds)

Salt

  • 1 ¾ teaspoons kosher salt divided, plus more to taste

Vegetables

  • 2 large shallots peeled and sliced
  • 12 ounces fresh green beans trimmed
  • 3 cloves garlic minced
  • 1 ½ teaspoons fresh ginger grated or finely minced

Broth and Coconut Cream

  • ¾ cup low-sodium chicken broth
  • 1 can coconut cream (13.5 ounces), shaken well

Lime

  • 1 heaping teaspoon freshly grated lime zest (from about 2 limes)
  • 1 tablespoon fresh lime juice (from 1 to 2 limes), plus more to taste

Garnish and Serving Suggestions

Instructions
 

Sear the chicken

  • Heat 1 ½ tablespoons of oil in a large deep skillet over medium-high heat. Season the chicken on both sides with 1 teaspoon of kosher salt. Cook the chicken in the skillet until golden brown, 4 to 6 minutes per side, then transfer to a plate and cover with foil.

Cook the vegetables

  • Add the remaining ½ tablespoon of oil to the pan. Sauté shallots with ¾ teaspoon salt until translucent. Add green beans and garlic, tossing until fragrant, then add ginger and broth, scraping the bottom of the pan.

Add the coconut cream and finish cooking the chicken

  • Stir in the coconut cream. Nestle the chicken back in the pan, simmering until chicken registers 165°F, about 7 to 10 minutes.

Add the lime and serve

  • Turn off the heat, add lime zest and juice, and stir. Taste and adjust seasoning. Serve garnished with cilantro, coconut, lime wedges, and with rice on the side.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days.
