Ingredients
  

  • 2 pounds broccoli
  • Kosher or sea salt to taste
  • 3 tablespoons unsalted butter divided, plus more for greasing the dish
  • ½ cup panko breadcrumbs
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 2 cups shredded sharp cheddar cheese divided
  • Freshly ground black pepper to taste

  • Cut the heads of broccoli into florets and prepare the stems. Boil water, add salt, and cook broccoli stems and then florets until tender. Drain and cool with ice water.
  • Preheat the oven to 400°F and butter a 9x13-inch glass casserole dish.
  • Melt 1 tablespoon of butter in the pot, add breadcrumbs and toast until golden brown. Set aside.
  • Melt the remaining 2 tablespoons of butter, add flour and whisk to form a roux. Slowly whisk in milk, simmer until thickened, then remove from heat and stir in 1 cup of cheese.
  • Add drained broccoli to the casserole dish, season with salt and pepper, pour cheese sauce over, top with remaining cheese and toasted breadcrumbs.
  • Bake for about 20 minutes until the top is golden brown. Let sit for 5 to 10 minutes before serving.

Notes

Let leftovers cool completely before placing them in the fridge. Tightly sealed, they will last 2 to 3 days.
