Ingredients
  

Blueberry Spread

  • 1 cup blueberries
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons sugar

Sandwich Assembly

  • 4 slices sourdough bread
  • 4 slices cheddar cheese
  • 4 ounces crumbled goat cheese
  • softened butter to spread over bread

Instructions

  • Heat blueberries, vinegar, and sugar in a saucepan over medium heat until the blueberries break down and the mixture resembles a thick paste (about 5 minutes).
  • Spread a layer of blueberry spread onto one of the slices of bread.
  • Add two slices of cheddar over the blueberry spread.
  • Spread the goat cheese over the sliced cheddar.
  • Place another bread slice over the goat cheese.
  • Spread softened butter over both the top and bottom of the sandwich.
  • Heat a skillet over medium heat and cook the sandwich on each side for 2-3 minutes, or until cheese is melty.
  • Cut sandwich in half and serve hot.
