Ingredients
  

For the Salad

  • 2.5 cups cooked shredded chicken
  • 4 strips bacon cooked to crisp and chopped
  • 0.5 cup sliced cherry or grape tomatoes
  • 0.25 cup diced red onion
  • 2 tablespoons chopped fresh chives or green onion

For the Dressing

  • 0.25 cup mayonnaise use avocado oil mayo for a healthier option
  • 0.25 cup plain Greek yogurt
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon fine salt
  • 0.125 teaspoon black pepper
  • additional cooked chopped bacon optional for topping
  • chopped chives optional for topping

Instructions
 

Preparation

  • In a medium bowl combine the shredded chicken, cooked and chopped bacon, tomatoes, red onion, and chives; set aside.
  • In a small bowl combine the mayo, yogurt, garlic powder, onion powder, salt, and pepper. Stir together until well combined.
  • Pour the dressing over the salad ingredients, and stir until combined.
  • If desired, garnish with additional bacon and chives. Serve with crackers, in a tortilla or lettuce wrap, as a sandwich, or over a bed of greens.

Notes

For dairy free, omit the Greek yogurt and double the amount of mayonnaise.
