Ingredients
  

  • 1 lb ground beef
  • 1 package cheese tortellini about 20 oz
  • 1 can enchilada sauce 10 oz
  • 1 can diced tomatoes 14 oz
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cups shredded Mexican cheese blend
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • 2 green onions sliced
  • 2 tablespoon fresh cilantro chopped

Instructions
 

  • Cook tortellini according to package; drain and set aside.
  • Heat olive oil in skillet; sauté onion and garlic until soft.
  • Add ground beef; cook until browned, season with salt and pepper.
  • Stir in enchilada sauce and diced tomatoes; simmer 5 minutes.
  • Add cooked tortellini; stir to coat.
  • Sprinkle cheese on top; cover and cook until melted.
  • Garnish with green onions and cilantro before serving.

Notes

Add corn or black beans for extra texture. Adjust spice level with jalapeños or hot sauce. Great for meal prep and reheats well.
