Ingredients
  

  • 1 ripe banana
  • ¾ cup light brown sugar
  • ½ cup unsalted butter, melted
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • 2 teaspoon cinnamon powder
  • ½ teaspoon salt
  • 1 ⅓ cup flour add 1 tablespoon more at a time if dough is too wet
  • ½ cup semi-sweet chocolate chips
  • flaky sea salt for sprinkling on top

Instructions
 

  • Preheat your oven to 350°F and line a baking sheet with parchment paper. Add the banana to a bowl and mash it until smooth. Add the melted butter and brown sugar.
  • Whisk to combine. Add egg yolk, baking soda, cinnamon, and salt. Whisk again to combine.
  • Add the flour and fold using a spatula. If the dough is too wet, add more flour, 1 tablespoon at a time. Fold in the chocolate chips.
  • Bake for 10-12 minutes until the edges start getting golden. Remove the cookies from the oven and let them rest for 15 minutes before handling and eating.
  • Sprinkle some flaky salt on top and serve!
