- 1 ripe banana
- ¾ cup light brown sugar
- ½ cup unsalted butter, melted
- 1 egg yolk
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- 2 teaspoon cinnamon powder
- ½ teaspoon salt
- 1 ⅓ cup flour add 1 tablespoon more at a time if dough is too wet
- ½ cup semi-sweet chocolate chips
- flaky sea salt for sprinkling on top
Preheat your oven to 350°F and line a baking sheet with parchment paper. Add the banana to a bowl and mash it until smooth. Add the melted butter and brown sugar.
Whisk to combine. Add egg yolk, baking soda, cinnamon, and salt. Whisk again to combine.
Add the flour and fold using a spatula. If the dough is too wet, add more flour, 1 tablespoon at a time. Fold in the chocolate chips.
Bake for 10-12 minutes until the edges start getting golden. Remove the cookies from the oven and let them rest for 15 minutes before handling and eating.
Sprinkle some flaky salt on top and serve!
